Instructions:

1. Crush cookies into a fine powder - this can be done by hand in a resealable plastic bag, or in a food processor.

2. Mix together your crushed cookies, cream cheese, CBD coconut oil, and a few drops of peppermint extract (optional).

3. Prepare a baking sheet with a piece of parchment paper. Using a tablespoon, scoop out your cookie mixture and form into balls, then place them on your baking sheet. Place baking sheet in the freezer for 15 minutes.

4. Melt your chocolate.

5. Once your chocolate has melted, remove the cookie balls from the freezer, and use a spoon to drop and coat each ball in the melted chocolate, then place back on the baking tray to cool. Add toppings if desired.

6. Place baking tray back in the freezer to allow chocolate to set. Once chocolate has set, store the finished treats in your fridge in an airtight container.

In need of a vegan option? Not to worry! This Vegan Gingerbread Cookie recipe is not only delicious, but you can spend time decorating together with those closest to you! A tasty holiday treat and a fun, festive activity all rolled up into one!

Ingredients:

Cookies:

- 1 flax "egg" (1 tablespoon flax seeds, - 1 tsp Vanilla Extract

freshly ground + 3 tablespoons warm water) - 2 1/3 cups all-purpose flour

- 1/4 cup (1/2 stick) vegan butter - 1 1/2 tsp baking soda

- 1/4 cup Unscented CBD Coconut Salve - 1 1/4 tsp Ground Cinnamon

- 1/2 cup coconut sugar - 1 1/4 tsp Ground Ginger

- 1/2 cup molasses - 1/4 tsp salt

- 1 tbsp apple cider vinegar

Icing:

- 2 tablespoons vegan butter

- 1 cup organic powdered sugar, sifted

- 1-2 tablespoons plain unsweetened almond milk

Instructions:

1. In a small bowl, stir together the ground flax and warm water. Set aside for 3-5 minutes to thicken.

2. In a large mixing bowl, mix together the vegan butter, CBD coconut oil, sugar, molasses, apple cider vinegar, vanilla, and flax "egg" until fully combined. Mix in the flour, baking soda, cinnamon, ginger, and salt until just combined. The dough should be very thick.

3. Wrap the dough in plastic wrap and chill it for 1 hour in the freezer.

4. Once chilled, divide the dough in half and roll it out between two pieces of parchment paper, flouring the bottom piece of parchment paper and top of the dough as needed to prevent the dough from sticking. The rolled dough should be about ¼-inch thick.

5. Cut dough into desired shapes and place on a parchment-lined baking sheet 2 inches apart. Chill in the freezer for 10 minutes prior to baking to help them retain their shape.

6. While the cut dough is chilling, preheat the oven to 350˚F. Bake the cookies for 8-10 minutes, or just until the edges begin to turn a darker brown. Allow cookies to cool completely.

7. Prepare the icing: In a large mixing bowl, cream together the vegan butter and powdered sugar. Mix in the almond milk 1 tablespoon at a time until the texture is thick but pliable. Transfer the icing to a sandwich-sized sealable bag. Squeeze out any air, then seal the bag. Use scissors to cut a tiny hole (about 1 mm) in one of the bottom corners.

8. Decorate the cookies however you like! Leftover cookies should be kept covered and stored at room temperature (up to a few days).

(Makes 1/2 to 2 Dozen Cookies at ~5 - 20mg CBD each)
